Mark Bittman, aka “The Minimalist” @ The New York Times, discussing a plan for responsible eating that is both healthy for the consumer and responsible to the planet. He argues against the traditional stance of vegetarianism, and pushes for a more eco-minded view.
I am going to start following a version of his personal eating schedule:
“From the time I wake up in the morning until dinner I only eat fruits, vegetables, whole grains and legumes… and then I have one meal a day where I pretty much do whatever I want.”
